Hot Plate Roast Chicken

Sometimes the propane runs out. That’s just a fact of life when you cook a lot for a big family and can’t remember when the last delivery was until you go to turn on the oven and nothing happens. And it’s exactly why I keep a little hotplate from a hardware store handy. And if you think you can’t cook a whole chicken on a hot plate. Think again. Here I simply took a whole roaster, removed the spine and flattened it so it would fit nicely in the pan. Then, I added some olive oil, salt, pepper, sage and sliced lemon and voila, dinner.
